Crab Stuffed Mushrooms

These delicious little stuffed mushrooms not only look the part but are so simple to make.
Perfect as a party snack!


12 Medium Mushrooms
120g Crab Meat
1 Cup Fine Bread Crumbs
1/2 Red Pepper, Finely Chopped
1/4 Tsp Celery Salt
1/4 Tsp Cracked Black Pepper
1 Tsp Cajun Spice
3 Tbsp Parmesan Cheese
6 Spring Onions
4 Tbsp Butter


Wash the mushrooms and gently pop out the stems. Melt the butter and use a little to lightly grease a baking tray. Use the rest of the melted butter to brush over the mushrooms and lay into a baking tray.

Melt the remaining butter into a pan, and the onion and red pepper, cooking until tender. Remove from heat and mix in the crab, bread crumbs, celery salt, black pepper and Cajun spice.

Fill Each mushroom generously with the mix and sprinkle with the Parmesan cheese.

Bake in a preheated oven at 200C for around 15 - 20 minutes, or until cheese is bubbling and mushrooms are cooked through.

Serve up and enjoy!

Peppermint Chocolate Chip Ice Cream - 1 Tub

Whip up a lovely batch of delicious peppermint ice cream ready for the summer sun! Who can resist... :)


3 Tbsp Peppermint
150g Chocolate Chips
1 Cup Milk
2 Cups Heavy Cream
6 Egg Yolks
2/3 Cup Sugar
A Pinch of Salt

What to do:

Add the peppermint, milk and 1 cup of cream to a pan and heat gently for a few minutes. Remove from heat, cover and leave to infuse for 40 minutes. Add the salt and sugar to the mixture, and heat gently again until dissolved.

Whisk the egg yolks, slowly adding the peppermint mixture a bit at a time. Return to a low heat for about 10 minutes, stirring constantly until
thickened. Remove from heat and stir in the rest of the cold cream to stop the cooking.

Chill the mixture in a refrigerator for at least 2 hours. Stir in the chocolate chips and transfer to the freezer. Remove from freezer and whisk every hour for the first 3 hours and then leave to set for the final freeze. Scoop into a bowl and enjoy!

Baked Stuffed Apples With Vanilla Yogurt
Serves 6

For a fantastically delicious & easy to make dessert make sure to try our tasty stuffed apples!

All you need...

1/2 Tsp Cinnamon
1/2 Tsp Ground Cloves
1/2 Allspice
2 Vanilla Pods
6 Baking Apples
2 Tbsp Raisins
2 Tbsp Butter
1/4 Cup Sugar
1/2 Cup Water
1 Cup Natural Yogurt

Here's what to do...

Core the apples leaving them whole and unpeeled. Mix the raisins and sugar together in a bowl and spoon into center of apples, dividing evenly.

Place side by side on a baking tray. Add a blob of butter to the top of each apple and sprinkle on, cinnamon, allspice and clove mixture.

Bake at 200C for 25 minutes or until the apples are soft.

While the apples are baking, spoon the natural yogurt into a bowl. Take your vanilla pods and slice down the length of them with a knife. Scoop out the seeds and mix well with the natural yogurt.

Serve each apple straight from the oven with a large dollop of Vanilla Yogurt!

Spring Smoothies

Enjoy a zesty and refreshing smoothie in the Spring sunshine!
Not only will this healthy smoothie boost your energy levels, it is also packed with vitamins, minerals and countless health benefits!

All You need:

1/2 Cup Pineapple Chunks
1/2 Cup Strawberries
1/2 Cup Sliced Banana
1 Tsp Ginger
1 Tsp Cinnamon
4 Ice Cubes

Add all ingredients to a blender and blend for about 20 seconds. It's that simple!

Whiz up the night before for a healthy & quick breakfast! Add a few oats to keep you full up until lunch time!

Puff Pastry Pepper Pizza!  Serves 3 - 4

Everyone deserves a treat at the weekend, so why not try our simple puff pastry pizza!

- 1 Tsp Oregano
- 1/2 Tsp Paprika
- 1 Tsp Rosemary
- 1/2 Tsp Cracked Black
- 1 Pre-Rolled Puff Pastry
- 3 Tbsp Tomato Puree
- 1 Mozzarella Ball
- 1/2 Red Onion, Sliced
- 1/2 Red Pepper Sliced
- 1/2 Green Pepper Sliced
- 4 Large Mushrooms Sliced
- Drizzle of Olive Oil

What to do

This recipe is so simple you could do it with your eyes closed (but we don't recommend it!)

Cover a large baking tray with grease proof paper and lay the puff pastry sheet on top.

Add a dollop of tomato puree to the pastry sheet and spread over the whole surface leaving around 2cm around the edges.

Add your peppers, onion, and mushrooms in no particular order, spreading out to create an even coverage.

Chop the mozzarella ball into slices around half a cm thick and add to the pizza.

Drizzle over the olive oil and sprinkle on the oregano, paprika, rosemary and cracked black pepper.

Your pizza is now ready to go in the oven! Cook at 200C in a pre-heated oven for around 10 minutes or until the crust is golden and the cheese is bubbling.

Cut in to slices and dig in!

Crispy Courgette Fingers!

Perfect as a side for any meal or as a tasty snack!

What you need:

- 1 Large Courgette
- 1 Pack of Breadcrumb
- 2 Eggs
- 1 Tbs Paprika
- 1 Tsps Black Pepper
- 1 Tbsp Oregano

What to do:

- Wash the courgette and chop into fingers (approximately 6cm x 2cm)

- Crack both eggs into a bowl and beat well. Pour the breadcrumbs into a second bowl and mix in the Paprika, Cracked Black Pepper & Oregano.

- Now for the messy bit! Dip each courgette finger into the egg and then roll in the breadcrumb mixture each finger is evenly coated.

- Place each finger onto a baking tray. Preheat the oven to 200C and cook for around 35 minutes or until golden brown. Turn once in between to prevent fingers from sticking to the tray.

Tip: Delicious served with a spicy salsa dip!

Smoked Salmon, Mushroom & Garlic Linguine
The perfect mid-week dinner!
Serves 4

For a vegetarian option replace the smoked salmon with delicious courgette wedges!


- 200g Smoked Salmon
- 200g Mushrooms (sliced)
- 400g Linguine
- 4 Tbs Crème Fraîche
- 1 Tbsp Dill
- 1 Tsp Garlic Powder
- 1 Tsp Thyme
- 1/2 Tsp Cracked Black


- In a large pan, set the linguine cooking for around 10 minutes or until al dente.

- Whilst the pasta is cooking, add a little oil to a frying pan and cook the mushrooms for around 5 minutes or until soft.

- Drain the linguine and return to the pan. Stir in the crème fraîche, garlic powder, smoked salmon trimmings, and mushrooms. Mix on a low heat for around a minute.

- Toss in all remaining herbs & spices and mix well.

Serve straight away with a lemon wedge for squeezing!

Fresh New Spring Recipes from Herbed Up!

Refreshing Cucumber & Avocado Soup

Ingredients: (serves 4)

- 2 Cucumbers (peeled, seeded & cubed)

- 1 Avocado (peeled & cubed)
- 1/4 Tsp Ground Black Pepper
- 1 Tbsp Parsley
- Pinch of Cayenne Pepper
- Pinch of Salt
- 2 Cloves Garlic (crushed)
- 1 Onion (diced)
- 1/2 Cup Low-Fat Yogurt
- 1 1/2 Cups Vegetable Stock
- 1 Tbsp Olive Oil
- 1 Tbsp Lemon Juice


- Heat olive oil in a pan and add in the garlic and onions. Cook until soft and golden brown, stirring occasionally. Add in the lemon juice and cook for a further 1 minute.

- Next add in just over 3/4 of the cucumber (save a little to garnish), vegetable stock, ground black pepper, cayenne pepper & salt. Simmer for around 8 minutes, or until cucumbers are soft.

- Pour mixture into a blender and add the avocado and parsley. Blend on a low speed until smooth. Stir in the yogurt.

- Just before serving, garnish with the remaining cucumber (chopped into small cubes) and a little fresh parsley.

This delicious soup can be served chilled on a sunny spring afternoon or warm with thick crusty bread to keep you toasty on those chilly nights!  (just in case the nice weather doesn't come quite as soon as we had hoped!)
